Easy chicken recipe, but gives different spin on the simple "chicken and vegetable" diet meal. The tomatoes help trap juices so chicken won't over dry in oven. Ingredients

    6 chicken breast, boneless and skinless
    1 cup dry quinoa
    1 1/2 cups water
    1/2 cup fresh lemon juice
    2 medium tomatoes, diced
    1 tsp lemon pepper
    1 tsp basil
    1 tsp black pepper
    3 tablespoons Parmesan cheese

Directions

Preheat oven to 325 degrees F. Season chicken breast with lemon pepper, basil, and black pepper. Place chicken on to foil lined baking sheet. Spread diced tomatoes to cover chicken breasts. Top with Parmesan cheese. Bake for 25 minutes, over until chicken is done and juices run clear.

Best to cook quinoa in a rice cooker while chicken is baking. Combine quinoa with water and lemon juice. Cook until done. If using stove, follow directions on package. Lemon juice is added for flavor.
