Introduction

Ingredients

    I used a pre-mixed can of ingredients, but you can buy everything fresh. Everything that I listed you can find in the can. I looked at the ingredients myself, and marked them down for future reference.

    Beans, black, 1 cup
    Sweet Corn, Fresh, 1 cup
    Del Monte Diced Tomatoes, No Salt Added, 0.5 cup
    Onions, raw, 1 cup, chopped
    Green Peppers (bell peppers), 1 cup, strips (or chopped)
    Celery, cooked, 1 cup, diced
    *Chipotle Seasoning (Sauce or Spice) (3.5 oz serving), 1 serving
    Chicken Breast (cooked), no skin, 1 unit (yield from 1 lb ready-to-cook (1 Chicken breast per 4 servings)
    Sour Cream, reduced fat, 1 tbsp
    Iceberg Lettuce (salad), 1 cup, shredded or chopped
    Whole-Wheat Crackers, 4 cracker (per serving)

Tips

This recipe was made for myself, and it lasted me 4-5 days. I really enjoyed it. I made it thinking it was going to be really gross, but I really enjoyed it. On top of lettuce was a really nice add for a person that loves salad!! I really didn't want salad dressing. I replaced chips with crackers to make it low fat/calorie.


Directions

Start your slow cooker on low, and put your chicken in first so you can weigh it down with your ingredients.
Add: Beans, corn, Diced tomatoes, onions, Green Peppers, Celery, Chipotle.

Cook on low for 5 hours.

After 5 hours you will remove the chicken, and shred the chicken. After shredding the chicken you will replace the chicken into the slow cooker for 2 more hours on LOW.

After 2 hours you will put the mixed ingredients on top of cool lettuce. Top the Chicken Taco meal with crackers (or corn chips) and Low Fat (light) sour cream and enjoy!

Serving Size: Makes 4-6 oz. (Tops lettuce nicely) 4 times.
