Ingredients

    1 cup vegan butter substitute*
    2 3/4 cups flour (a combination of ww pastry and unbleached white)
    1/2 cup truvia
    1 1/2 tsp ener-g egg replacer + 2 tbsp warm water
    1 tsp vanilla extract
    1/2 tsp almond extract
    1 tsp baking powder
    1/4 tsp salt or nusalt
    2 tbsp unsweetened almond milk (or other vegan milk sub)

Tips

more unbleached white flour, instead of wheat, will make the cookies more "dessert" like (and less "health food" like)
*for the nutrition calculations I used Smart Balance Light but you can use any vegan sub (or regular butter if you're not vegan). I bet Earth Balance coconut margarine would taste amazing in this recipe!


Directions

In a large bowl combine margarine, sugar sub, egg replacer (prepared beforehand), vanilla and almond extracts. Add flour, salt, baking powder and milk and mix until blended. Roll into a ball, wrap in plastic wrap and chill for at least 1 hour.
Roll out and cut with your cookie cutters. Bake 6-7min in a 400F oven, 1 inch apart.
**if you want to decorate with sprinkles, etc, remember to put them on before baking!
