Ingredients

    Leftover ham bone with a generous amount of meat left on it
    6 1/2 cup Dry Pinto Beans
    1 large Onion, chopped
    Celery, 5 stalks, chopped fine
    3 oz red wine, optional
    3 oz white wine, optional
    2 tsp. Garlic powder
    2 tsp. Onion powder
    1 1/2 Garlic Salt
    1 1/2 Onion Salt
    6 Bay Leaves
    1 1/2 tsp. Old Bay Seasoning
    1 tsp. Parsley, dried
    1/2 tsp. Tony Cachere's Creole Seasoning
    1 tsp. Veron's Seasoning or substitute more Tony's
    3 tbsp. Dried or Fresh Chopped Chives, optional

Tips

This freezes great in quart freezer bags!


Directions

Place ham bone in 5 qt crock-pot, add beans, wine, and veggies. Fill with water up to 1 inch from top. Heat on high until hot, then add spices and switch to low. Add water as needed, do not let it get dry. Cook on low overnight, the longer the better! It is not possible to overcook! When ready to eat, scoop out bay leaves and bones. Skim any fat off the top. Smash some of the beans to make this a thick and hearty dish! Add some extra ham if desired. Experiment with the spices to make it your own! Enjoy!
