Ingredients

FRENCH TOAST
1 loaf French Bread - torn into chunks or cut into cubes
8 whole Eggs
1 1/4 c. Almond milk
1 1/4 c. Coconut milk beverage
1/2 c. Sugar
2 Tbsp. Vanilla extract
TOPPING
1/2 c. All-purpose flour
1/2 c. Firmly packed brown sugar
1 tsp Ground cinnamon
1/4 tsp Salt
6 Tbsp Earth Balance vegan buttery sticks - Cold, cut into pieces
Directions
Grease 9x13-inch baking pan. Tear bread into chunks and evenly distribute in the pan. Mix together eggs, almond milk, coconut mik beverage, sugar, and vanilla. Pour evenly over the bread. Cover tightly and store in the fridge several hours or overnight.
When you're ready to bake the casserole, preheat oven to 350 degrees. While oven is preheating, in a bowl, combine flour, brown sugar, ground cinnamon, and salt. Add butter pieces and mix into dry mixture with a fork or pastry blender until mixture resembles fine pebbles. Remove casserole from fridge and sprinkle crumb mixture on top. Bake for 50 minutes, until it resembles a firm bread pudding.
Cut into 9 pieces and serve.
