    6 cod fillets (about 3 lbs)
    2 tsp ground coriander
    2 tsp salt or to your taste
    1 tsp fresh ground pepper
    4 or 5 cloves crushed garlic
    1/3 cup lemon juice or the juice 2 fresh lemons
    3 tbs extra virgin olive oil


Mujadara (Lentils and rice) is a great side dish along with a tossed salad with balsamic dressing.


In a baking pan (a pyrex pan or long casserole pan) lay out the cod fillets side by side. Sprinkle the dry ingredients evenly over the fish. Pour lemon juice and olive oil evenly over the fish. Bake in a pre-heated 350 degree oven for about 30 minutes. Check the fish with a fork. If it flakes easily it is done!
