Ingredients

3 Chipotle Pepper in 3 Tbsp Adobo Sauce
Olive Oil, .25 cup
Cremini mushrooms, quartered, 1 pound
Zucchini, diced, 1 pound
Onions, raw, 2 medium, chopped
Garlic, 3 cloves, chopped
Chile peppers, 3, chopped
Cumin, ground, 1 tbsp
Coriander, ground, 1 tbsp
Thyme, fresh, 1 tsp
Marjoram, dried, 1 tsp
Tomato Paste, 0.25 cup
Landshark Lager, 1 bottle
Beans - Bush's Black Beans Reduced Sodium, 1 can
Lime Juice, juice of 1 lime, 2 tbsp
Scallions, raw, .5 cup, chopped
Dairy - Daisy Light Sour Cream, divided into 4 servings

Directions
Cover chipotle peppers with a couple of cups of water and bring to a boil, 10 minutes.
In a large pot, heat the olive oil over medium-high heat. Add the mushrooms and brown for 7-8 minutes, then add the zucchini, onions, garlic, fresh chile pepper, spices, herbs, salt, and pepper. Stir frequently for 10 minutes.
Add the tomato paste and stir for 1 minute. Add the beer to deglaze the pan. Stir in the beans. Bring to a bubble, and then reduce the heat and simmer for 10 minutes to combine the flavors.
Add the lime juice.
Serve with sour cream and cilantro on top.
