Ingredients

    1 pound ground beef (lean)
    1 pound ground pork (lean)
    1 cup pearl rice
    2 medium sized cabbages
    1 48 oz can Heinz tomato juice (no salt)
    1 large onion (chopped finely)
    2 cloves garlic (chopped finely)
    1 tbs margarine or bacon fat
    4 tbs chopped parsley
    1 tbs salt
    1 tbs pepper

Directions

1. Prefreeze cabbages whole for one week.

2. Defrost cabbages overnight. Remove the core of each leaf, cut leaves into 4 quarters.

3. Wash rice in cold water until water runs clear; cook. (I prefer a rice cooker due to the sticky texture after)

4. Chop onion & saute in fat until tender, add chopped garlic careful not to overcook.

5. Blean rice, raw meats, onion mixture (when cooled), add salt, pepper and parsley.

6. Use 1/4 of leaf and add about 2 tbs of mixture depending on size of leaf. Roll like a burito.

7. Preheat oven to 350 degrees.

8. Place rolls into large roaster (the large black ones used for turkey). Add salt and a little pepper (about one tsp of each). Pour entire can of tomato juice over the rolls. Use excess leaves to cover rolls.

9. Place roaster into oven and cook for about 3-4 hours (or until strong cabbage rolls smell through the house; test doneness)
