Ingredients

    One half box jumbo pasta stuffing shells
    1 jar pasta sauce (32 oz)
    2 ten ounce boxes of chopped frozen spinach, thawed (fresh spinach can be used as well)
    16 oz ricotta cheese
    8 oz. shredded mozzarella
    2 large eggs
    1/4 teaspoon garlic
    1/4 cup parmesan cheese

Tips

Can add 1 pound ground meat or italian sausage to the sauce. Saute chopped zucchini and onions and add instead of or in addition to spinach.


Directions

Boil pasta shells as directed, drain. Press moisture from thawed spinach. In bowl combine eggs, ricotta, mozzarella and garlic, then stir in spinach. Stuff shells with sinach mixture. in a 13x9 pan, spread 1 cup sauce on bottom. Arrange shells in layer on sauce, then pour remaining sauce over shells. Sprinkle with parmesan cheese and bake at 350 for 35 minutes.

Serving Size: Makes 7 servings of 3 shells each.
