Ingredients

    1 lb of chuck steak, ground
    2 slices white bread, torn into small pieces
    1/2 c. low-fat buttermilk
    1/4 c. grated Parmesan cheese
    1 large egg yolk

    Add buttermilk and bread together in medium mixing bowl and mash together with fork until well combined. Add remaining ingredients and S&P to taste. Mix well then form into meatballs (about 3 TB each, yielding ~14 meatballs).

    Brown meatballs in 2 TB olive oil, turning to cook evenly. Remove from pan and set aside.

    Add the following to the pan:

    1 28-oz can crushed tomatoes
    1 tsp minced garlic
    2 TB olive oil
    1 TB fresh minced basil
    Salt and pepper to taste

    Bring to a boil, then lower heat and simmer gently for 10 minutes. Add meatballs to sauce and continue simmering for another 5 minutes until meatballs are warmed through.

    Makes 4 servings. Serve over pasta.
