Introduction

A spicy take on beans and cornbread... with veggies added. A spicy take on beans and cornbread... with veggies added.
Number of Servings: 10

Ingredients

    2 cans of Great Northern White Beans, drained and rinsed
    1 container (32 oz) chicken broth
    1 large (28 oz) can diced tomatoes
    2 cup chopped carrots
    1 cup chopped onion
    3-5 cloves of garlic, chopped
    3-5 andouille sausages, sliced into chunks
    2 tbsp cumin
    2 tbsp paprika
    salt & pepper to taste
    1 tablespoon bacon grease or other pork fat
    Several splashes of hot sauce (optional)

    Mix/heat all, simmer for 20 minutes or so.

    Five minutes before serving, add in one bag (6-7 cups) of fresh spinach, Stir into the soup and heat until wilted.

Directions

This is a southern style recipe... something to eat in moderation (although the veggies make it a little healthier!)

Serving Size: Makes about 10 bowls of soup.
