Ingredients

    One bag of dry black eye peas, water to cover add salt, onion, garlic, sweet bell peppers and fresh tomatoes, let them cook until beans are tender but not mushy, about 45 minutes to an hour.
    While the beans are cooking I saute the bacon, chorizo, ground turkey and turkey sausage (taken out from the skin) then I add to the beans and let it cook for about 30 minutes, mean while I peeled one potato, 1 sweet potato, one malanga/yautia (Tannier) (root like vegetable), 4 pcs of frozen cassava, half med butternut winter squash, one green plantain cut in round chunks and frozen corn cut in about one inch chunk.
    Add this to the beans and the meat adding water and lowering the heat to prevent from sticking to the pot and let it cook until everything is tender. Also can be cooked on crock pot.

Tips

Serve over rice add a salad


Directions

I like to cook slow to enhance all the flavors the more you cook the better it taste.
