    Traditional Whole Grain Quinoa, 3 cups cooked
    Cucumber, 1 cup, chopped
    Onions, raw, 1 cup, chopped
    Tomatoes, 1 cup, chopped
    Bell pepper, 1 cup, chopped
    *Parsely, raw 1 cup, chopped
    Celery, raw, .25 cup, slice very thin
    Fresh Mint, 2 tablespoons, chopped
    Olive Oil, 4 tbsp
    Lemon juice, 4 tbsp
    *Feta Cheese - Low Fat, 12 oz
    Salt, 1 tbsp
    Pepper, black, 1 tbsp
    Garlic, fresh, chopped, 2 Tablespoons

Tips

You can use bulgar, couscous or any other grain that you love in this recipe.


Directions

Cook quinoa as instructed on box. Let cool.
Add all other ingredients into a large bowl.
Add the quinoa after it is cooled and mix well.
Super simple.
