Number of Servings: 4

Ingredients

    4 cups Jicama, coarsely shredded or chopped
    1/4 cup lime juice
    1 tbsp olive oil
    1 tbsp chili powder
    1/2 tsp ground mexican oregano

Directions

In large bowl, combine lime juice, chili powder and oregano. Whisk in olive oil. Add jicama and toss well. For best flavor, refrigerate 24 hours before serving.

Serving size: 1 cup

Ingredient notes:

* If you can't get fresh lime juice, I like Nellie & Joe's Key Lime Juice. Don't use RealLime. Eww.

* Mexican oregano is available at ethnic food stores or from Penzeys. It's more pungent than regular oregano.

    Quick, simple, fresh and tasty. I agree about the lime juice; I've been a big fan of Key Lime for years. It also makes an awesome cheesecake. - 12/6/09
