Number of Servings: 4


    1/2 cup chopped onion
    1/4 cup chopped celery
    1/4 cup chpped green bell pepper
    1/4 cup butter, cubed
    1 cup beef broth
    2 cups half and half cream
    1/4 lb corned beef chopped
    3/4 cup sauerkraut, rinsed and well drained
    1/4 tsp salt
    1/4 tsp black pepper
    1 cup (4 oz.) shredded Swiss cheese


You can add 2 Tbls.all purpose flour before adding broth, after adding broth cook and stir until thickened, see instructions for the rest.


In a large saucepan, saute onion, clelery and green pepper in buktter until tender.Add broth, bring to a boil, cook and stir for 2 minutes. Reduce heat to low. Add the cream, corned beef, sauerkraut, salt and pepper; heat through (do not boil). Stir in cheese until melted. Serve.
