Introduction

Ingredients

    1 small head cabbage sliced thin
    2 jalepenos, finely chopped
    3 scallions or green onions, finely chopped
    1 bunch cilantro, stems removed and finely chopped
    Juice of 1 lime
    1/4 cup mayonaise
    1 tblp agave nector (or a packet of artificial sweetner)
    zest of 1 lime

Tips

I like to use agave nectar to slightly cut the twang or the lime juice, but you can use equal or sweet and low if you want no calories. I will take a pork loin, a can of green chilis and package or lipton onion soup mix in a slow cooker. Shred it and then serve with this slaw on corn tortillas that have been baked in the oven to make oil free tostadas. You can use either the pork number of grilled fish. Throw on a slice or 2 of avocado and it's delish. :)


Directions

Mix first 4 ingredients. In a seperate bowl, mix juice, mayo, nectar and lime zest. Combine with first 4 ingredients!

Serving Size: Makes 8 1 cup servings
