Ingredients

    2 tablespoons olive oil
    1 medium onion - chopped
    4 cloves fresh garlic/minced
    1 1/2 cups sliced mushrooms
    4 celery stalks - cut into 1/4 inch slices
    4 medium carrots - cut into 1/4 slices
    8 cups vegetable broth
    3 cups lentils
    3 tablespoons curry powder
    coarse black pepper

Tips

I use a Dutch oven for all my soups but any soup pot is fine. The curry seasoning in this recipe is mild - so add more if you are a curry lover. Enjoy!


Directions

Add 2 tablespoons olive oil to heated 6 quart Dutch oven. Saute onions until translucent. Add garlic - continue to saute for one minute. Add 2 cups vegetable broth to onions and garlic. Add celery and carrots. Bring to a mild boil - simmer for 10 minutes. Add remaining vegetable stock and lentils. Cover Dutch oven. Simmer for approximately 40-50 minutes - stirring frequently. Consistency will be similar to split pea soup. Shorten cooking time for firmer lentils.
