Introduction

I like to make this with the leftover chicken from a Costco roast chicken. You can make it even lighter by using less mayo and more fage (greek unsweetened nonfat yogurt) but you need SOME mayo or it won't taste right. Ingredients

    7 ounces chicken breast
    1 granny smith apple, small dice
    2 ribs celery, small dice
    6 scallions, sliced small
    1/4 cup mayonnaise
    1/4 cup 0% fage greek yogurt
    salt and pepper to taste

Tips

I like this on whole wheat bread with my savory cranberry chutney!


Directions

Chop everything into a bowl and fold in the mayo, yogurt and salt and pepper. It's best, in my opinion, if the veggies are chopped quite small. Also better the next day!

This makes enough for three generously filled sandwiches. You could even add more veggies if you want; I've even added broccoli -- quite delish, but again must be cut small.
