Ingredients

    1 9 in deep dish pie crust
    4 lg eggs
    3/4 cup 1% milk
    1/2 Cup light whipping cream
    1/2 Cup shredded colby jack cheese
    4 roasted Green Chili Peppers
    1/2 tsp chili powder
    1/2 tsp ground cumin
    1/2 tsp dried cilantro (optional)
    1 cup shredded cooked boneless skinless chicken breast

Tips

you can use fresh chopped cilantro, I just didn't have any when I put this together.


Directions

Sprinkle some of the cheese in the bottom of the pie crust. Cut stem tops off of the roasted green chili's and split them open. Remove seeds if you don't like it very hot. Lay the open green chili's on top of the cheese, covering the whole bottom. Sprinkle the remainder of the cheese on top of the green chilis. Sprinkle the shredded chicken breast on top of the cheese. In a bowl beat together the eggs, cream, milk and spices. Pour over the top of the chicken, cheese and chili. Bake for 1 hour at 350 degrees
