Ingredients

    6 large Russet potatoes, peeled and quartered (about 3 lbs)
    4 oz light cream cheese, softenend, cubed
    3/4 cup hot low fat milk
    1/2 cup light cheddar cheese
    1/4 cup dry bread crumbs
    1/2 tsp paprika
    freshly grated nutmeg

Tips

Note, I added salt to the water before cooking the potatoes, but did not include nor figure it into the nutrition as I am not sure how much sodium would stay in the water vs being absorbed by the potato.


Directions

Cook peeled and cut up potatoes in boiling water about 20 or until fork tender. Drain, and return to pot on low heat for 1 to 2 minutes to dry potatoes.

Mash or rice potatoes very smooth and mix with milk and cream cheese. Season with Nutmeg to taste. Spray 8 cup casserole dish with food spray and spread potato mixture into dish.

Combine cheddar cheese, bread crumbs, and paprika and sprinkle over potatoes.

Bake uncovered for 40 to 50 minutes until top is golden.
