Fast and easy. The ingredients list is not gluten free, however, I used all gluten free ingredients. It's not easy to find things listed in the drop down menu that say they are gluten free. Ingredients

1 pound of 80/20 ground beef
1 large egg
1/2 cup of dry gluten free oatmeal, put this into a blender and whiz until it more resembles cornmeal
4 TB. finely chopped onion
1/2 tsp. onion powder
1/2 tsp. black pepper
2 TB. ketchup
1/2 tsp. seasoned salt
Tips
I pressed the meatloaf down into each muffin cups and then mounded on top of each one the extra mixture. Then I took a spoon and went around each one so that there was space around the meatloaf and the wall of the muffin cup to give room for drainage so it wouldn't overflow the muffin tin. That worked well. I didn't really time it but near as I can figure, it was about half an hour. They we done all the way through. Big hit with the family. Served with coleslaw and "skinny" mashed potatoes.
Directions
Preheat oven to 350 degrees. Prepare a 6 cup muffin tin with nonstick spray.
Place all ingredients ( remember to blend the oatmeal into powder ) in a medium sized bowl and mix thoroughly. Divide the meatloaf evenly into the muffin cups and mound up if necessary. Sprinkle the tops with a little salt and pepper. Bake until done, 30-45 minutes.
Serving Size: Makes 6 meatloaf muffins. One muffin is one serving
