Delicious pancakes that are low carb, high fiber and high protein! Great for a snack, or you can eat the entire recipe as a meal for 541 calories! Ingredients

    3 Tbs. coconut flour
    3 eggs, or 3/4 c. egg substitute (saves 120 calories)
    1/4 c. unsweetened applesauce
    1/3 c. canned coconut milk
    6 drops vanilla flavored stevia, optional
    1/4 tsp. baking soda
    1/4 tsp. apple cider vinegar
    1 Tbs. coconut oil for frying

Directions

Heat skillet or pan to medium heat. Melt coconut oil in pan.
Mix coconut flour and eggs. Add all other ingredients.
Fry 2 pancakes at a time, 3 if you have a large pan.
