Introduction

Ingredients



    Bacon, 4 medium slices, cooked
    Onions, raw, 1 cup, chopped
    Garlic, 3 cloves
    Rosemary, 1 tbsp
    99% Fat Free Chicken Broth , 6 cups
    1 Cauliflower, raw, large (6-7" dia)
    2 Red Potatoes

Directions

Dice bacon and put in soup pot. When bacon starts to release fat, add onion. When onion starts to get soft, add garlic. Add rosemary when garlic is golden. add 6 cups chicken broth and cauliflower chopped into uniform chunks (the smaller pieces the less cooking time). Add potatoes, which you have scrubbed and chopped into quarters.
After about 50 minutes, check potatos for softness. If done, remove pot and remove skin. Place potatoes back in pot.
Use hand blender or transfer soup to food processor. Puree.
Serve with chopped scallions, additional bacon bits, or shredded cheddar cheese. *Nutritional value does NOT reflect add-ons.
