Ingredients

    3/4 cup dry quinoa
    1-1/2 cups water
    2 eggs
    2 egg whites
    1 cup shredded zucchini
    1 cup shredded Mexican style cheese blend
    4 oz. cooked and shredded roast beef
    4 Tablespoons grated parmesan cheese, divided
    1/2 tsp. garlic
    2 tbsp. chopped onions
    1/4 tsp. salt
    1/4 tsp. black pepper

Tips

You can divide this up into mini muffin tins for even more bite-sized morsels. Modify it with whatever leftover vegetables and meat you have on hand. Light, delicious, quick, and nutritious!


Directions

Preheat oven to 350 degrees; liberally spray muffin tins with nonstick cooking spray. Cook the quinoa and water; set aside. In a large bowl, combine eggs and egg whites; beat until blended. Add in cooked quinoa, zucchini, cheese blend, beef, half the parmesan cheese, garlic, onions, salt and pepper; mix well. Divide evenly into muffin tin. Bake 10-15 minutes or until almost done, then add the last 2 tbsp. of parmesan cheese on top and bake for another 5 minutes or until cheese is melted and edges have turned slightly golden brown. Let set in tins for 5 minutes before removing.
