Ingredients

2 sweet potatoes
1/2 cup skim milk
1 frozen package of green peas
2 cups chopped onion
1 1/2 cups chopped celery
1 1/2 cups chopped carrots
1 pound extra lean ground beef
1 cup low sodium beef broth
1 cup water
1 small can tomato paste
1 tbsp thyme
1 tbsp rosemary
salt and pepper to taste
Directions
In a stock pot, boil both sweet potatoes for 30 minutes, or until tender.
Meanwhile, in a large skillet, brown ground beef while draining off all visible fat and grease.
In another skillet, add all vegetables except for peas, and one tablespoon of coconut oil. Brown vegetables until tender. Once ground beef is brown, add in vegetables. Then add peas, spices, water, broth, and simmer for 10 minutes. Transfer mixture to baking dish and add in tomato paste. In a separate bowl mash sweet potatoes with milk. Spoon sweet potatoes over the mixture and bake for 20 minutes at 350 degrees F.
