Introduction

Ingredients

3 boneless, skinless chicken breasts
4 tablespoons Smart Balance Light butter spread (or substitute butter or margarine if you like)
1/8 cup dijon mustard
1/4 cup honey
1 teaspoon Old Bay seasoning (or use your favorite spice blend)
1/4 teaspoon cayenne pepper (more, if you like more spice)
Directions
Preheat the oven to 350 degrees.
Melt the butter substitute in a small saucepan over medium-low heat. Add the mustard, honey, seasoning and cayenne and cook until the sauce is well mixed and thickened (about 2 minutes).
Place the chicken breast halves in a 9x9 square baking dish. Poke some holes in them with a fork to allow some of the sauce to penetrate the chicken. You can marinate it this way, or cook it immediately.
Bake the chicken for 50 minutes, flipping halfway through, and basting the other side.
If you prefer a crispier top, finish the chicken under the broiler.
Serve with brown rice or couscous and steamed vegetables.
