Ingredients

    3/4 Cup dry quinoa
    2 cups black beans, soaked and prepared
    1 tsp ground cumin
    1/8 tsp cayenne pepper
    Salt and pepper to taste
    1 half of a zucchini, diced
    1 tomato, diced
    1 onion
    3 cloves of garlic
    2 tsp olive oil
    Avocados
    Whole wheat tortillas

Directions

Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned. Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes. Stir diced zucchini and tomatoes into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans. Use 1/4 an avocado and 1/8 cup shredded cabbage per taco. (Tortillas were NOT included in total. I use Mama Lupe's low carb tortillas for 60 calories per tortilla)
