Ingredients

    1 1/2 cups all-purpose flour
    3 1/2 teaspoons baking powder
    1 teaspoon salt
    1/2 teaspoon ground nutmeg
    1 1/4 cups mashed cooked sweet potatoes
    1/3 cup liquid egg whites
    1 1/2 cups almond milk
    1/4 cup butter, melted

    *gluten free option-substitute brown rice flour or potato four
    *More whole grains-substitute 3/4 cup flour with whole grain flour

Tips

Top lightly with syrup. Great just sprinkled with cinnamon to decrease sugar and calories.


Directions

Cook 1 1/4 cups of sweet potatoes soft enough to mash. Easiest method is steam 2 large pierced sweet potatoes in microwave, and remove skin with cooled. While potatoes are cooking, sift dry ingredients into a large mixing bowl. Combine remaining wet ingredients into a separate medium bowl. Add wet ingredients into large bowl of dry and whisk together until moistened. Drop by tablespoons or 1/4 cup onto a greased skillet or non stick griddle on about 350 degrees. When bubbles form on top, flip and lightly brown on both sides.

Serving Size: makes 12 4 inch width pancakes, or 24 silver dollar size
