Number of Servings: 6


    (1/4 pkg) Whole wheat pasta (rotini)
    Mushrooms (roughly 12 slices)
    (1 cup) Broccoli florets
    (3 strips) Red bell pepper, diced
    (3 strips) Yellow bell pepper, diced
    (1) garlic clove
    Tomato basil pasta sauce (no sugar or preservatives added)
    (1.5 tbs) Olive oil


1. Boil pasta according to directions
2. Heat oil in skillet.
3. Add all veggies to oil and stir for 3-4 minutes.
4. Add tofu to skillet. Stir additional 3 minutes.
5. Add a cup of pasta sauce. Let everything merry for a few minutes.
6. Stir pasta noodles into skillet.
7. Mix and serve.

Serving Size: Makes 6 1-cup servings (roughly)
