Introduction

This is a gluten free almost vegan except for the eggs. This is a gluten free almost vegan except for the eggs.

Ingredients

    1/4 onion chopped
    1/4 red bell pepper chopped
    1 gluten free bread slice cubed
    1 slice swiss cheese
    2 eggs
    2 veggie sausage links

Tips

It is gluten free vegan if you substitute the eggs for silken tofu or another ingredient that has the consistency of eggs.


Directions

Preheat oven to 350. saute onion and pepper in olive oil or coconut oil. while that is cooking, cube bread and place in greased one serving oven proof container; whisk eggs and place desired spices with eggs; pour over cubed bread; cut swiss cheese into small squares and place randomly on top of eggs; drain oil from onion and peppers and place on top; cut sausage into slices and place on top. Bake for 30 minutes
