Ingredients

¾ lb turkey if desired
1 can black beans
1 can Mexican stewed tomatoes, undrained
1 can diced tomatoes, undrained
1 cup frozen corn (or use can, just add at tail end of cooking)
½ cup chopped onion (or onion flavor of your liking)
2 cloves minced garlic (I used ¼ tsp minced from jar)
1 tsp Mexican seasoning (usually I add this to the turkey after it’s cooked)
1/3 cup sour cream (for topping)
Add more beans if you'd like to suit taste, needs.
Tips
Santitas Corn Chips for nachos is my recommendation for nachos. (gluten free)
For shells – they do have black bean and corn mix now or the whole wheat are tasty if you don’t need to be completely gluten free.
Recommend for a burrito to put some in a bowl with some corn tortilla chips and let the chips absorb the liquid and flavor and then add to the burrito.
Also a must is always sour cream on the top! I love my sour cream!
Directions
Cook turkey, drain, then season.
Combine turkey, beans, tomatoes with juice, corn (if using frozen), onion, garlic in slow cooker.
Cover and cook low 4-5 hrs.
If desired you serve with noodles, lettuce, as a bowl of chili, in a burrito, as a topping to nachos.
Very versatile.
