Ingredients

    1 large Onion, chopped
    3/4 cup Scallions, chopped
    1/4 cup Light butter
    1 (16 oz) can Pumpkin
    4 cups Chicken Broth 99% Fat Free
    1 Bay Leaf
    1 tsp Sugar
    1 tsp Curry powder
    1 tsp Nutmeg
    Several Parsley sprigs
    2 cups fat free Half and Half
    Salt and pepper

Directions

Sauté onion and scallions in butter. Stir in pumpkin, broth, bay leaf, sugar, curry, nutmeg, and parsley. Simmer uncovered for 15 minutes. Transfer soup into food processor and purée. Return to pan and add half and half, salt and pepper. Simmer for 5-10 minutes.
