Ingredients

Lightlife Smart Cutlets, 2 cutlet package
1/4 cup Butter, unsalted
1 cup Mushrooms, sliced
1/4 cup Onions, chopped
1/3 cup All Purpose Flour
1 tsp Salt
1/2 tsp Black Pepper
1/4 tsp Cayenne Pepper
1 cup Vegetable Broth, low sodium
1 1/2 cup Almond Milk, unsweetened original
1 cup Green Peas
1/4 cup Pimentos
2 Tbsp Sherry, dry (optional)
Tips
Serve over toasted bread triangles, pasta, puff pastry shells or sheets cut into squares and prepared per package.
Directions
Brown cutlets in pan, then chop and set a side. Melt butter in pan and saute onions & mushrooms just until soft. Then add flour and spices and cook for 1 minute (if too thick, add a little of the broth). Add both the broth and milk at once and stir until thickened and bubbly (about 15 minutes). Next add cutlets, peas, pimentos, and sherry (if using). Cook for another 5 to 10 minutes until peas are tender and flavors meld.
