Ingredients

    4 Fresh tomatoes - chopped
    3 Large Cucumbers - Peeled and pared
    1 Bunch of cilantro - finely chopped
    2 Tbsp Balsamic Vinegar
    3 Tbsp Extra Virgin Light Olive Oil
    1/2 Cup feta cheese
    Salt to taste

Tips

Optional ingredients:
- Avocado
- Sun Dried Tomatoes


Directions

1.Chop tomatoes, peeled cucumbers and cilantro
2. In medium bowl combine chopped tomatoes, cucumber and cilantro.
3. Add vinegar and olive oil
4. Toss to coat.
5. Sprinkle crumbled feta cheese.
6.Season with salt and serve.
