Ingredients

    1-1/2 cups dried Great Northern Beans
    10 cloves of garlic, minced
    1/2 cup of fresh squeezed lemon juice (about 2 large lemons)
    1/4 cup of extra virgin olive oil
    1 tablespoon black pepper
    1/4 cup of salt

Tips

- Use as a dip for veggies or pita chips
- Use as a sandwich filling. Put about 1/2 cup in a pita pocket, along with veggies, such as cucumber, tomato, red onion, and lettuce.


Directions

Soak beans for 6-8 hours, or overnight. Drain and rinse. In a saucepan or dutch oven, add beans and about 4-3/4 cups of water. Bring to a boil, then lower to a low boil/high simmer for 1 to 1-1/2 hours, or until soft. Drain beans put into a large bowl. Mash with a potato masher until desired consistency. Let beans cool.

Add minced garlic, lemon juice, olive oil, black pepper, and salt. Combine well. Chill until ready to use.

Serving Size: Makes 8 1/2-cup servings. Makes ~4 cups total.
