Introduction

Best whipped cream ever! Lower in fat, calories and no animals were tortured to make it. Best whipped cream ever! Lower in fat, calories and no animals were tortured to make it.

Ingredients

    1 can whole coconut milk (don't get the low fat)
    1/2 teaspoon vanilla extract
    2-3 teaspoons maple syrup (or to taste - I never measure!)

Tips

If it isn't whipping up fluffy enough, just pop it in the freezer for 15-30 minutes or so, then whip some more. The key to the loft is the chill!


Directions

Refrigerate can of coconut overnight
Open and scoop out the hard part into a bowl - (save the liquid and use in other desert dishes when milk is called for)
Whip the cream - takes no time at all, add the maple syrup and vanilla to taste - and YUM! You have whipped cream!

Serving Size: Makes about 6-8 servings
