    Mushrooms, fresh, 8 oz package, sliced
    Vegetable Broth (or chicken), up to 2 cups
    Shallots, 1 Medium, chopped
    Garlic, 3 cloves, chopped
    Celery, raw, 1 stalk, chopped
    Flour, white, 1 TBSP
    Olive Oil, 1 tbsp
    Salt, 1 tsp
    Pepper, black, 1 dash
    Parsley, 1 tbsp fresh, chopped
    Mushrooms, canned, about 1/2 can
    Chicken Breast (cooked), no skin, 1.5 breast, bone and skin removed


This can be made without the chicken - and has about 1/2 the calories without it!


Heat oil in pan, add shallots, garlic, celery & parsley. Saute until shallots are opaue. Add fresh mushrooms, sauteeing until the begin to darken in color & shrink. Add 1 TBSP flour, 1 cup of broth, and salt & pepper - stirring until flour dissolves. Simmer until mushrooms are cooked through (about 8-10 minutes). Put in belnder (half at a time) & puree mixture.. put back on heat, stirring & adding up to one more cup of broth until desired consistency is reached. Add in canned mushrooms & chicken & heat another 5-10 minutes.
