Introduction
This dip is a healthy alternative to dairy-based ranch dip. It is cashew-based rather than made with any soy products. It is more delicious than any conventional ranch and it gets a LOT of requests from people of all dietary backgrounds. Ingredients

1 C raw cashews, soaked for 2 hours in water
2 dates, soaked in at least 1 C water
1/4 C fresh lemon juice (about 1 lemon)
1/4 C raw apple cider vinegar
1 lg clove garlic (or 2 small)
2 Tbsp onion (I like sweet onion or red onion.)
0.5 Tbsp Herbamare (sea salt/herb blend)
0.5 Tbsp all purpose seasoning (salt-free)
0.5 bunch parsley
Handfull fresh dill
Handfull fresh basil
Tips
I usually make a big double batch and keep it in the fridge for snacking. You can use whatever fresh herbs you want. I use a LOT of herbs because they make a lively and tasty final product.
Directions
Drain and rinse soaked cashews.
Add all ingredients except fresh herbs to cashews in blender. (The longer you soak the cashews, the creamier the final product.) Blend until well-combined and smooth. Add fresh herbs and pulse to combine as desired.
Transfer to container and store in fridge. This dip tastes better after at least an hour or two in the fridge to give the flavors time to blend.
