Introduction

Minus the cheese this is a paleo/ Gluten free frienldy meal on the go. I make these on a sunday night, divide it into 4 peices and pkg them in zip lock bags. 1 minute in the microwave and youve got a delcious breakfast on the go. Ingredients

    Egg, fresh, 6 large
    1 cup Fully cooked Jimmy dean Turkey Sausage Crumble Hormel Bacon Bits, 1/2 cup
    Half of a diced Onion
    1/2 a Green Peppers chopped
    1/2 a red pepper chopped
    1 cup of diced fresh Mushrooms
    1/2 cup shredded low fat chedder (omit if you are doing paleo)

Tips

I also like to dice up asparagus into mine too, i didnt add it to this recipie but it is a delicious addition. If you do add it you will want to sautee it with teh onions and peppers and calculate it into the food tracker.


Directions

mix all ingriedents (except your eggs and cheese) into a frying pan. Sautee until peppers and onions are soft. in a seperate bowl mix all eggs (and cheese if you are using cheese) and beat well. Once pepper and sausage mix has been sauteed you can pour the egg mix into the skilet and stir well and let the mix cook through the bottom. Once teh top starts to cook you can put yoru whole pan into the broiler on your oven and allow it to cook the rest of the way through. Once the top is golden brown you can pull yoru skillet out of the oven flip the frittata out of the skillet and onto a cutting board to cool down.

Serving Size: serving size depends on pan used. I used a 10" pan and it made 4 large peices
