Ingredients

1.5 cups dried lentils
6c. vegetable stock
.5 c. chopped dried apricots
3 T. oil
1 c. chopped onion
3 c. cubed eggplant
2 c. chopped tomatoes (fresh or canned)
1 green pepper, chopped
1/4 t. cinnamon
1/4 t. allspice
1/4 t. cayenne
1 T. paprika
1.5 t. salt
Directions
Rinse lentils, bring to boil in stock. Reduce heat and simmer, covered for 20 min. Add chopped apricots and simmer another 20 min.
Meanwhile, saute onions in oil until translucent, add eggplant and 4-5T of water. Cook covered on medium heat, stirring occasionally until eggplant is almost tender. Add green pepper, dried spices and salt. Cover and cook until tender, around 10 minutes.
Stir sauteed vegetables into cooked lentils mixture and simmer 15 minutes.
Garnish with chopped mint and parsley
