Ingredients

450 g lean ground turkey
1 large carrot, shredded
1 cup shitake mushrooms, small dice
4 scallions, finely chopped
1/4 cup water chestnuts,small dice
1 med red pepper, small dice
1/2 cup cilantro, finely chopped
1.5 cups napa cabbage, fine slices
3 cloves garlic, finely diced
1 large egg
1.5 T sesame oil
2 T rice wine
2 T soy sauce
6 T hoisin sauce
Directions
1)Preheat oven to 350 F
2) Saute mushroom until tender over medium heat (about 5 min) then add garlic and cook for 1 min longer. Set aside to cool.
3) Combine all ingredients in a large bowl.
4) Form loaf on a large piece of foil. Roll it up and twist ends. Shape into a tube and place on a sheet pan.
5) Cook until thermometer inserted into the middle shows 160 F (about 75 minutes).
6) Uncover foil and baste 1/2 of the hoisin sauce then back into the oven for 5 min. Apply the rest of the hoisin and back into the over for 5 min.
7) Remove from oven and allow to rest for at least 15 min.
8) Slice and serve. You can add a bit of hoisin on each slice if you wish.
