Introduction

These muffins are great for fiber when you are watching glycemic load. These muffins are great for fiber when you are watching glycemic load.
Number of Servings: 24

Ingredients

    1 1/2 cups All Bran cereal
    1 cup whole almonds
    3 cups wheat bran
    3 T whole wheat flour
    1/3 cup dark brown sugar
    1 tsp baking powder
    1 tsp baking soda
    2 tsp ground allspice
    1 tsp ground cinnamon
    1/2 tsp ground nutmeg
    1/2 tsp salt
    1/2 cup dried cherries
    3 eggs
    1 1/4 cups milk 1%
    1/2 cup canola oil
    1 tsp vanilla extract
    muffin liners

Tips

You can use 1/2 cup apple chunks or blueberries, or cranberries in place of the dried cherries. I also make a batch and freeze them. Simply pop one in the microwave for 30 seconds. Easy premade breakfast with a boiled egg.


Directions

Preheat oven to 350 degrees. Grind Almonds in food processor, then remove, then grind All-Bran. Mix dry ingredients with wet then fold in dried cherries, use ice cream scoop and fill muffin cups. Bake for 20 minutes. Remove muffins from tins and serve warm.
