Ingredients

    2 lbs Hot Italian Sausage
    1 cup ea. dry Lentils and Split Peas
    1 T. Mexican style chile powder
    1 T. ground cumin
    1 large onion - chopped
    2 cloves chopped garlic
    1/2 t. salt
    1/2 t. freshly ground pepper
    1/4 t. cayenne pepper
    3 cans Black Beans (drained)
    1 can Navy Beans (smashed)
    1 can Black Beans (smashed)
    1 large can diced tomatoes
    1 can diced Fire Roasted tomatoes
    1 can Rotel tomatoes
    1 small can green chiles
    About 2 qts. chicken broth

Tips

Freezes well for a quick lunch.


Directions

Crumble and cook sausage with onions and garlic. Add seasonings, lentils and split peas. Cook for 3 minutes longer. Add all other ingredients except Quinoa. Bring to a boil and then lower heat to simmer. Cook for 60 minutes. Add Quinoa and simmer for 20 minutes longer.

    Incredible!
    Delicious! I love that it makes such a huge pot, too. It makes for easy and quick lunches. I freeze it in individual containers, grab a container from the freezer and go. - 11/23/13
