Introduction

This is a wonderful recipe to use if you have leftover mashed sweet potatoes. Especially on a rainy day! This is a wonderful recipe to use if you have leftover mashed sweet potatoes. Especially on a rainy day!

Ingredients

    3 cups mashed sweet potato
    1/2 cup onion chopped
    2 1/2 cup chicken/vegetable broth
    1 cup raw baby carrots
    1 tbsp olive oil
    1 tsp turmeric
    1 tsp cumin
    1 tsp ginger
    1 tsp cinnamon

Tips

This recipe is great if you have leftover mashed sweet potatoes! Which I did. :)


Directions

Heat oil in soup pan, sauté chopped onion and baby carrots. put part of the broth in with sautéed onions and carrots in a blender along with the spices, blend. Return to pot and add mashed sweet potatoes with the remainder of the broth and heat and whoila! Eat!

    Needs a little bit of salt so I added it - 1/27/13
