Introduction

I had a few sweet potatoes laying around getting old, among other random ingredients, so I whipped this recipe together and it tasted filling and great. I had to use onion powder instead of an onion and it was fine. I had 3 small sweet potatoes that needed to be eaten, and I think it was about 2 cups cubed. Turned out cream and delicious paired with a salad for hearty meal. Ingredients

    sweet potato (3 small, cubed)
    butter (i used blue bonnet)
    garlic
    onion
    chicken broth
    ground coriander
    ground ginger
    ground cinnamon
    skim milk
    light cream cheese
    salt & pepper to taste

Directions

saute the chopped garlic and onion in the butter. Add chicken broth and bring to a boil. Add cubed sweet potato and cook at a gentle boil until potatoes are soft and break apart easily. add spices.

I have a handheld emulsifier that I used at this point, but you can use a blender or food processor if you don't have one. After blending the potatoes, I added the milk and cream cheese and stirred until melty and combined.


Serving Size: makes about four 1-cup servings of soup
