Ingredients

- 1 lb Chicken Breats boneless and skinless
- 1 Large yellow onion, chopped
- 3 cloves garlic, chopped
- 1 cup sliced mushrooms
- 1 tsp ground ginger
- 1 cup plain, non-fat yogurt
- 1/2 cup coconut milk (or 2% milk or soy milk)
- 3 tbsp oil (vegetable, canola, etc)
- 2 tbsp Indian Style Curry Powder
- 2 tsp salt
Tips
Suggest serving with indian rice and nan bread.
Directions
Chop onions and garlic and simmer in pot in oil until soft. Chop chicken breasts into slices or cubes, and add. Add yogurt, mushrooms, milk, spices, and stir well.
Cook mixture on medium heat for 10 minutes, stirring regularly. Decrease heat to simmer and cook another twenty minutes, covered. Continue stirring occasionally. Make sure chicken pieces are cooked through and then remove from heat. Ready to serve!
