Ingredients

1-1.5 lbs Ground beef
2 cups brown rice + .25 cup tomato sauce + 2 strips bacon + taco seasoning (spanish rice)
1 can refried beans
.5 can corn
1 cup onions
1 cup peppers
a small amount of oil
6 whole wheat tortillas
.75 cup shredded cheese
can or packet of enchilada verde sauce
Tips
Great leftovers, but tortillas get too soggy after a few days.
Directions
Brown ground beef and mix up spanish rice. Microwave tortillas for 20 seconds for easier folding. Fold everything else up into the burritos loosely, and drench with enchilada sauce. Top with a sprinkle of cheese (included in calorie count) and/or pico, salsa, guac... whatever you'd like?
