Introduction

I noticed a lack of protein muffins in Spark Recipes, so when I came across this one I just had to share.

These muffins are great for a snack, breakfast on the go or a quick bite before the gym!

These muffins are great for a snack, breakfast on the go or a quick bite before the gym!

Number of Servings: 12

Ingredients

    1 large ripe banana

    1/2 C. low fat greek yogurt (I used Oikos 0% plain)

    3/4 C. oats

    5 egg whites

    2 scoops vanilla protein powder

    1/2 cup sweetener that measures like sugar (I used individual packages, about 12)

    1 t. baking powder

    1 t. baking soda

    1/2 t. cinnamon

Tips

Add a handful of raisins for a bit of chewy sweetness, or some chocolate chips for some gooey goodness (keep in mind this will up the calorie and sugar count, etc.)

These are not a typical muffin texture, rather I found them to have a texture similar to angel food cake.


Directions

Preheat oven to 350 degrees.

Coat muffin tin with non-stick spray (or line with foil or silicone liners - no paper, it will stick).

Combine ingredients in a bowl and mix well.

Fill muffin tins about 1/2 - 3/4 full (roughly 1/4 C.).

Bake 15-18 minutes, or when toothpick comes out clean.

Serving Size: Makes 12 servings, roughly 1/4 cup each
