Ingredients

    2 cups - Green and yellow zucchini/squash, sliced or quartered thinly
    1/4 cup - Grape tomatoes
    2 cloves garlic sliced thinly
    1.5 tsp Extra Virgin Olive Oil (Kirkland Filippo Berio Organic, is what I used)
    Black Pepper to taste
    Sea Salt to taste
    1/4 Tbsp dried basil or use fresh basil

Tips

I just mixed all in the same pan--did not separate--and cooked til zucchini looked soft. It was delicious and had lots of potassium.


Directions

Heat 1/2 of olive oil in skillet or braising pan. When it shimmers, add zucchini & cook quickly until browned. Remove to a bowl & set aside. Add the rest of the olive oil to pan and add garlic. Saute briefly, 30 seconds-1 minute, then add grape tomatoes. When tomatoes begin to soften & release juices, add zucchini back to pan, season with sea salt& pepper, & toss to combine. Add basil, toss again, & serve hot or at room temperature.
