Ingredients

1 stick light margarine
4 oz light cream cheese
1.25 c powdered erythritol
5 large eggs
3 tsp banana extract
1 tsp vanilla extract
.75 c garbanzo bean flour
.25 c golden flax meal
.5 c coconut flour
1 tsp baking powder
1/2 c walnuts
Tips
This is a great dessert, but I usually eat for breakfast.
Directions
Preheat oven to 350.
Combine cream cheese and margarine. Beat with mixer until light and fluffy.
Add erythritol, vanilla and banana extracts, and slowly add eggs, one at a time, while beating at slow speed. Scrape sides to ensure a good mix.
Mix for 30 seconds on medium-high speed.
Reduce speed to low, and add almond flour, flax meal, cocnut flour, baking soda, and walnut (if desired). Mix for one minute.
Pour batter into weel-greased loaf pan.
Bake for 25 to 35 minutes in preheated oven. Skewer should come out clean.
